After numerous cycles in your glasswashing machine your glassware can still look pristine (if you follow proper glass care standards) but can actually be dirty.

Each time a glass is washed in a glasswashing machine a very small amount of Rinse Aid is left behind on the surface of the glass. To begin with this will not cause any issues but as it builds up, it starts to act a little like sticky tape, trapping minute amounts of hops, yeasts, proteins, water hardness salts and fats which the detergent cycle is unable to remove. Because these particles and the film are so small you may not see anything wrong with the glass and it will still be shiny and clean looking.

If this film is allowed to continue to build up without being treated then eventually you will start to see problems with each glass of beer you pour for a customer. It can begin with a lack of lacing down the glass as the customer drinks their pint, before starting to effect the head keeper or nucleate and also the head retention making each pint look flat and lifeless.

 

When to Renovate

Once a film has begun to build up it is time to Renovate®. Renovate® is a concentrated powder, designed to remove blooms and strip glasses of the build up of proteins and yeasts that some detergents can not remove. The easiest and cheapest way to find out if your glassware is due to be restored with renovation is to run a Water Break Test

Select a minimum of 10 random glasses from different places in your bar and place them in the sink area.  Try to use glasses which have been used for different products.

Pick up one of the glasses and holding it vertically, fill it to the brim with clean, cold water from the mains tap.

Invert the glass over the sink and empty all the water out.

Carefully dry the outside of the glass to remove any surface water, do not touch the inside of the glass and try not to knock the glass.

If the glass is beer clean then the water will fall out of the glass in a continuous sheet, but if there are spots, drips and dots of water left behind in the inside of the glass then it shows that the non-rinseable films are present and starting to build up.
